Instructions
Preheat your oven to 375°F (190°C).
Slice the kielbasa hasselback-style, making deep slits about 1 inch apart.
Wash and slice the peaches and jalapenos, then combine them in a mixing bowl.
Mix olive oil, honey, garlic powder, salt, and pepper in a small bowl.
Place the kielbasa in a baking dish and fill the slits with the peach and jalapeno mixture.
Drizzle the olive oil mixture over the kielbasa.
Cover the dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 15-20 minutes until golden brown.
Chop parsley for garnish.
Let the kielbasa rest before slicing and serving with juices and parsley on top.
