Instructions
1. Prepare your ingredients. If using fresh corn, slice the kernels off the cob until you have about 2 cups. Place the kernels in a mixing bowl.
2. Finely chop the jalapenos, removing seeds for milder heat. Add to the bowl with the corn.
3. In a separate bowl, combine flour, cornmeal, baking powder, salt, and pepper. Whisk until combined.
4. In another bowl, whisk the eggs and add milk. Mix thoroughly.
5. Pour the wet mixture into the dry ingredients and stir until just combined.
6. Gently fold in the corn and jalapeno mixture.
7. Heat vegetable oil in a frying pan over medium heat. Test oil with a spoonful of batter.
8. Drop spoonfuls of batter into the hot oil, frying for 3-4 minutes on each side until golden brown.
9. Remove nuggets with a slotted spoon and place on paper towels to absorb excess oil.
