Instructions
 

  • 1. Prepare your ingredients. If using fresh corn, slice the kernels off the cob until you have about 2 cups. Place the kernels in a mixing bowl.
  • 2. Finely chop the jalapenos, removing seeds for milder heat. Add to the bowl with the corn.
  • 3. In a separate bowl, combine flour, cornmeal, baking powder, salt, and pepper. Whisk until combined.
  • 4. In another bowl, whisk the eggs and add milk. Mix thoroughly.
  • 5. Pour the wet mixture into the dry ingredients and stir until just combined.
  • 6. Gently fold in the corn and jalapeno mixture.
  • 7. Heat vegetable oil in a frying pan over medium heat. Test oil with a spoonful of batter.
  • 8. Drop spoonfuls of batter into the hot oil, frying for 3-4 minutes on each side until golden brown.
  • 9. Remove nuggets with a slotted spoon and place on paper towels to absorb excess oil.
  • 10. Serve warm with your favorite dipping sauce.
