  • Begin by peeling the potatoes using a vegetable peeler.
  • Grate the potatoes using a box grater or food processor.
  • Gather the grated potatoes in a kitchen towel and squeeze out excess moisture.
  • In a large mixing bowl, combine the grated potatoes and chopped onions.
  • In a separate bowl, whisk the eggs until frothy and then add to the potato-onion mixture.
  • Add flour, salt, and black pepper to the bowl and stir gently until combined.
  • Heat a skillet over medium heat and add oil.
  • Drop portions of the mixture into the hot oil, flattening slightly to form pancakes.
  • Cook for 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes.
  • Transfer cooked pancakes to a paper towel-lined plate to absorb excess oil.
  • Serve hot with toppings like sour cream, applesauce, or fresh herbs.

Notes
