Ingredients
  

Main Ingredients

  • 1 pound Ground Meat Beef, turkey, or chicken can be used.
  • 2 tablespoons Taco Seasoning Your favorite blend.
  • 2 cups Shredded Cheese Cheddar or Monterey Jack recommended.
  • 1 bag Doritos 8-10 ounces, cheesy or spicy flavor.
  • 1 cup Sour Cream
  • 1 handful Green Onions Chopped for garnish.
  • 1 medium Bell Pepper Diced, green or red.
  • 1 tablespoon Olive Oil For sautéing.
  • 2 large Eggs Beaten.
  • 1 can Tomato Sauce 8 ounces.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add ground meat and cook until browned, about 5-7 minutes.
  • Add diced bell peppers and cook for an additional 3-4 minutes until tender.
  • Sprinkle in taco seasoning and stir well. Cook for another minute.
  • Pour in tomato sauce and simmer for about 5 minutes.
  • Prepare a 9x13 inch baking dish by greasing it.
  • In a mixing bowl, combine beaten eggs and sour cream until smooth.
  • Add the taco filling to the sour cream mixture and stir in shredded cheese.
  • Crush Doritos into small pieces and spread half in the bottom of the baking dish.
  • Pour the meat and cheese mixture over the Doritos.
  • Top with remaining crushed Doritos and additional cheese if desired.
  • Bake for 25-30 minutes until cheese is bubbly and top is golden brown.
  • Let cool for 5-10 minutes before garnishing with green onions and serving.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
