Instructions
Season the beef chuck roast with the birria spice mix and marinate for at least 30 minutes.
In a large pot, heat oil over medium heat, add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and stir until fragrant, about 1 minute.
Add the seasoned beef to the pot, browning it on all sides for about 8-10 minutes.
Add diced tomatoes, stir to combine, then pour in beef broth and bring to a boil.
Reduce heat to low, cover, and let simmer for 2 to 3 hours until meat is fork-tender.
Remove beef from pot, strain cooking liquid, and reserve for dipping.
Shred the beef using two forks.
In a skillet, place a tortilla, sprinkle cheese, add shredded beef, top with more cheese and another tortilla.
Cook for 3-4 minutes until golden, then flip and cook another 3-4 minutes.
Remove from skillet, cool slightly, and cut into wedges.
Repeat with remaining ingredients.
Serve with fresh cilantro, lime wedges, and reserved broth.
