  • 2 pounds Beef Chuck Roast Cut into large chunks.
  • 2 tablespoons Birria Spice Mix Blend of spices like cumin, oregano, and chili powder.
  • 4 cloves Garlic Minced.
  • 1 large Onion Chopped.
  • 2 medium Tomatoes Diced.
  • 4 cups Beef Broth Low-sodium.
  • 2 cups Shredded Cheese Oaxaca or mozzarella.
  • 8 large Flour Tortillas
  • 1 handful Fresh Cilantro Chopped.
  • 1 lime Lime Cut into wedges.

Instructions
 

  • Season the beef chuck roast with the birria spice mix and marinate for at least 30 minutes.
  • In a large pot, heat oil over medium heat, add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and stir until fragrant, about 1 minute.
  • Add the seasoned beef to the pot, browning it on all sides for about 8-10 minutes.
  • Add diced tomatoes, stir to combine, then pour in beef broth and bring to a boil.
  • Reduce heat to low, cover, and let simmer for 2 to 3 hours until meat is fork-tender.
  • Remove beef from pot, strain cooking liquid, and reserve for dipping.
  • Shred the beef using two forks.
  • In a skillet, place a tortilla, sprinkle cheese, add shredded beef, top with more cheese and another tortilla.
  • Cook for 3-4 minutes until golden, then flip and cook another 3-4 minutes.
  • Remove from skillet, cool slightly, and cut into wedges.
  • Repeat with remaining ingredients.
  • Serve with fresh cilantro, lime wedges, and reserved broth.

Notes

For a spicy twist, add diced jalapeños. Experiment with different cheeses for varied flavors.
