In a large mixing bowl, combine the potato chunks, sliced onions, minced garlic, thyme, olive oil, salt, and pepper. Toss until well-coated.
Spread the mixture evenly on a large baking sheet.
Roast for 30 minutes without stirring.
After 30 minutes, stir the mixture gently and return to the oven for an additional 20-25 minutes.
If using cheese, sprinkle it over the potatoes during the last 5 minutes of roasting.
Once cooked, let the potatoes sit for a few minutes before serving.
Serve warm, garnished with additional fresh thyme if desired.
