Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Peel the potatoes and cut them into evenly sized chunks, about 1 to 1.5 inches each.
  • Slice the onions thinly for even caramelization.
  • In a large mixing bowl, combine the potato chunks, sliced onions, minced garlic, thyme, olive oil, salt, and pepper. Toss until well-coated.
  • Spread the mixture evenly on a large baking sheet.
  • Roast for 30 minutes without stirring.
  • After 30 minutes, stir the mixture gently and return to the oven for an additional 20-25 minutes.
  • If using cheese, sprinkle it over the potatoes during the last 5 minutes of roasting.
  • Once cooked, let the potatoes sit for a few minutes before serving.
  • Serve warm, garnished with additional fresh thyme if desired.
