Potatoes

  • 2 pounds Russet Potatoes Peeled and cubed for even cooking.

Onions

  • 3 medium Yellow Onions Thinly sliced and caramelized.

Butter

  • 4 tablespoons Unsalted Butter For caramelizing onions and adding creaminess.

Cream

  • 1 cup Heavy Cream For desired creaminess.

Seasoning

  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper To taste.

Herbs

  • 1 teaspoon Fresh Thyme Leaves For added flavor.

Instructions
 

  • Peel and cube the russet potatoes, then place them in a large pot and cover with cold water. Add a pinch of salt.
  • Bring the pot to a boil over medium-high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  • In a skillet, melt the butter over medium heat and add the sliced onions. Cook slowly for 20-30 minutes until caramelized.
  • Drain the cooked potatoes and return them to the pot. Add the caramelized onions and heavy cream.
  • Mash the potatoes until creamy, adding more cream if needed for desired consistency.
  • Season with salt, pepper, and thyme. Mix well and adjust seasoning to taste.
  • Transfer to a serving bowl and garnish with additional thyme or melted butter if desired.
  • Serve warm as a side dish with your favorite main course.

Notes

For variations, consider adding cheese, roasted garlic, or sautéed mushrooms for extra flavor.
