Instructions
Peel and cube the russet potatoes, then place them in a large pot and cover with cold water. Add a pinch of salt.
Bring the pot to a boil over medium-high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
In a skillet, melt the butter over medium heat and add the sliced onions. Cook slowly for 20-30 minutes until caramelized.
Drain the cooked potatoes and return them to the pot. Add the caramelized onions and heavy cream.
Mash the potatoes until creamy, adding more cream if needed for desired consistency.
Season with salt, pepper, and thyme. Mix well and adjust seasoning to taste.
Transfer to a serving bowl and garnish with additional thyme or melted butter if desired.
Serve warm as a side dish with your favorite main course.
