Instructions
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on a towel to cool.
Heat olive oil in a large skillet over medium heat. Add sliced onions and caramelize for 15-20 minutes until golden.
Add minced garlic to the skillet and sauté for an additional 1-2 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella, and half of the Parmesan. Season with salt and pepper, and mix well.
Spread the ricotta mixture along each lasagna noodle, top with caramelized onions, and roll tightly. Place seam-side down in a greased baking dish.
Pour vegetable broth over the roll-ups and sprinkle remaining mozzarella and Parmesan on top.
Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
Let cool for 5-10 minutes before serving. Garnish with fresh herbs.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. They can also be frozen for up to three months.
