Instructions
 

  • 1. Clean the mushrooms by rinsing quickly under cold water and patting dry.
  • 2. Slice the mushrooms into even pieces, about ¼ inch thick.
  • 3. In a large skillet, heat olive oil over medium heat until shimmering.
  • 4. Add diced onion and sauté for about 5 minutes until translucent.
  • 5. Add minced garlic and sauté for an additional minute.
  • 6. Add sliced mushrooms and cook undisturbed for about 5 minutes.
  • 7. Stir mushrooms and continue to sauté for another 5-7 minutes until golden brown.
  • 8. Sprinkle in thyme, salt, and pepper, mixing well.
  • 9. Pour in vegetable broth and stir to combine, allowing to bubble gently.
  • 10. Reduce heat to low and let simmer for about 5 minutes.
  • 11. Taste and adjust seasoning if needed.
  • 12. Remove from heat and sprinkle with parsley before serving.

Notes

Serve warm with crusty bread or over creamy polenta. Store leftovers in an airtight container for up to three days.
