Instructions
1. Clean the mushrooms by rinsing quickly under cold water and patting dry.
2. Slice the mushrooms into even pieces, about ¼ inch thick.
3. In a large skillet, heat olive oil over medium heat until shimmering.
4. Add diced onion and sauté for about 5 minutes until translucent.
5. Add minced garlic and sauté for an additional minute.
6. Add sliced mushrooms and cook undisturbed for about 5 minutes.
7. Stir mushrooms and continue to sauté for another 5-7 minutes until golden brown.
8. Sprinkle in thyme, salt, and pepper, mixing well.
9. Pour in vegetable broth and stir to combine, allowing to bubble gently.
10. Reduce heat to low and let simmer for about 5 minutes.
11. Taste and adjust seasoning if needed.
12. Remove from heat and sprinkle with parsley before serving.
Notes
Serve warm with crusty bread or over creamy polenta. Store leftovers in an airtight container for up to three days.
