Ingredients
  

Potatoes

  • 2 pounds Yukon Gold or Russet Potatoes Peeled and cut into quarters.

Butter

  • 0.5 cup Unsalted Butter Melted gently.

Garlic

  • 4 cloves Minced Garlic Sautéed in butter.

Fresh Herbs

  • 0.25 cup Fresh Herbs (parsley and chives) Finely chopped.

Seasoning

  • 1 teaspoon Salt Adjust to taste.
  • 0.5 teaspoon Black Pepper Freshly ground.

Optional Cheese

  • 0.5 cup Shredded Cheese (cheddar or Parmesan) For added flavor.

Instructions
 

  • Gather all ingredients: potatoes, butter, garlic, herbs, salt, and pepper.
  • Peel and quarter the potatoes for even cooking.
  • Place potatoes in a large pot, cover with cold water, and add a pinch of salt.
  • Bring to a boil, then simmer for 15-20 minutes until fork-tender.
  • In a small saucepan, melt the butter over low heat.
  • Add minced garlic to the melted butter and sauté for 1-2 minutes until fragrant.
  • Remove from heat and stir in chopped herbs.
  • Drain the potatoes and return them to the pot to evaporate excess moisture.
  • Smash the potatoes to your desired creaminess with a potato masher.
  • Pour the cowboy butter mixture over the smashed potatoes and fold in gently.
  • Season with salt and pepper to taste, adjusting as necessary.
  • If using, fold in shredded cheese until melted.
  • Transfer to a serving dish and garnish with extra herbs or cheese.
  • Serve warm and enjoy!

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently with a splash of milk.
