Instructions
Gather all ingredients: potatoes, butter, garlic, herbs, salt, and pepper.
Peel and quarter the potatoes for even cooking.
Place potatoes in a large pot, cover with cold water, and add a pinch of salt.
Bring to a boil, then simmer for 15-20 minutes until fork-tender.
In a small saucepan, melt the butter over low heat.
Add minced garlic to the melted butter and sauté for 1-2 minutes until fragrant.
Remove from heat and stir in chopped herbs.
Drain the potatoes and return them to the pot to evaporate excess moisture.
Smash the potatoes to your desired creaminess with a potato masher.
Pour the cowboy butter mixture over the smashed potatoes and fold in gently.
Season with salt and pepper to taste, adjusting as necessary.
If using, fold in shredded cheese until melted.
Transfer to a serving dish and garnish with extra herbs or cheese.
Serve warm and enjoy!

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently with a splash of milk.
