  • 2 pounds Russet Potatoes Peeled and cut into chunks.
  • 0.5 cup Unsalted Butter 1 stick, melted.
  • 4 cloves Garlic Minced.
  • 0.5 cup Heavy Cream
  • 2 tablespoons Fresh Chives Chopped.
  • 1 tablespoon Fresh Parsley Chopped.
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper Freshly cracked, to taste.

Instructions
 

  • 1. Peel and chop the russet potatoes into even chunks. Place them in a large pot, cover with cold water, and add a pinch of salt.
  • 2. Bring the pot to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  • 3. In a small saucepan, melt the butter over medium heat, then add minced garlic and sauté for about 2 minutes until fragrant.
  • 4. Drain the cooked potatoes and return them to the pot. Let them sit for a couple of minutes to release steam.
  • 5. Add the melted garlic butter and heavy cream to the potatoes. Mash until desired consistency is reached.
  • 6. Stir in chopped herbs, salt, and pepper. Mix until well combined and adjust seasoning if necessary.
  • 7. Transfer to a serving bowl and garnish with additional herbs if desired. Serve warm.
