  • 1.5 pounds Boneless, Skinless Chicken Breasts Diced into bite-sized pieces.
  • 2 medium Fresh Peaches Sliced.
  • 14 ounces Coconut Milk Full-fat for creaminess.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Fresh Ginger Grated.
  • 1 tablespoon Honey For sweetness.
  • to taste Salt and Pepper For seasoning.
  • 2 tablespoons Olive Oil For cooking.

Garnish

  • 1 handful Fresh Basil Leaves For garnish.

Instructions
 

  • Prepare your ingredients: dice chicken, slice peaches, mince garlic, and grate ginger.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-7 minutes until golden brown.
  • Lower heat, add garlic and ginger, and sauté for 1-2 minutes until fragrant.
  • Pour in coconut milk and stir. Bring to a gentle simmer for about 5 minutes.
  • Add sliced peaches and honey, stirring gently to coat. Simmer for an additional 5-7 minutes.
  • Season with salt and pepper to taste. Adjust flavors as necessary.
  • Remove from heat and garnish with fresh basil leaves.
  • Serve warm over rice, quinoa, or with crusty bread.

Notes

Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
