Instructions
Prepare your ingredients: dice chicken, slice peaches, mince garlic, and grate ginger.
Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5-7 minutes until golden brown.
Lower heat, add garlic and ginger, and sauté for 1-2 minutes until fragrant.
Pour in coconut milk and stir. Bring to a gentle simmer for about 5 minutes.
Add sliced peaches and honey, stirring gently to coat. Simmer for an additional 5-7 minutes.
Season with salt and pepper to taste. Adjust flavors as necessary.
Remove from heat and garnish with fresh basil leaves.
Serve warm over rice, quinoa, or with crusty bread.
Notes
Store leftovers in an airtight container for up to three days. Can be frozen for up to three months.
