Instructions
 

  • In a medium bowl, combine chopped parsley, minced garlic, red pepper flakes, and oregano. Mix well.
  • Add red wine vinegar and olive oil to the mixture. Stir until fully combined. Season with salt and pepper to taste. Add lemon juice if desired.
  • Pat chicken breasts dry and place in a shallow dish or resealable bag. Pour half of the chimichurri sauce over the chicken and marinate for at least 30 minutes.
  • Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes on each side until internal temperature reaches 165°F.
  • Let the chicken rest for 5 minutes, then serve with remaining chimichurri sauce drizzled on top.
