Instructions
In a medium bowl, combine chopped parsley, minced garlic, red pepper flakes, and oregano. Mix well.
Add red wine vinegar and olive oil to the mixture. Stir until fully combined. Season with salt and pepper to taste. Add lemon juice if desired.
Pat chicken breasts dry and place in a shallow dish or resealable bag. Pour half of the chimichurri sauce over the chicken and marinate for at least 30 minutes.
Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook for 6-7 minutes on each side until internal temperature reaches 165°F.
Let the chicken rest for 5 minutes, then serve with remaining chimichurri sauce drizzled on top.
