Instructions
Heat a large skillet over medium heat and add olive oil. Sauté chopped onion and diced bell pepper for 3-4 minutes until softened.
Add ground beef to the skillet, breaking it up as it cooks. Season with salt, pepper, and garlic powder. Cook until browned, about 6-8 minutes.
Remove from heat and let cool slightly. Prepare two tortillas by sprinkling half of the shredded cheese on each.
Distribute the beef and vegetable mixture evenly over the cheese on each tortilla, then top with remaining cheese.
Fold each tortilla in half and return to the skillet. Cook for 3-4 minutes on each side until golden brown and crispy.
Remove from skillet, let cool for a minute, then slice into wedges. Serve warm with optional toppings.
