Ingredients
  

Pasta

  • 12 ounces Pasta (spaghetti, fettuccine, or penne) Choose your favorite type.

Onions

  • 2 large Yellow or Sweet Onions Slice thinly for even caramelization.

Olive Oil

  • 3 tablespoons Extra Virgin Olive Oil For sautéing the onions.

Garlic

  • 3-4 cloves Garlic, minced Add towards the end of cooking onions.

Salt

  • 1 teaspoon Salt To season the onions.

Pepper

  • 0.5 teaspoon Freshly Cracked Black Pepper Adjust according to taste.

Parmesan Cheese

  • 0.5 cup Grated Parmesan Cheese For serving.

Fresh Herbs

  • 2 tablespoons Chopped Fresh Thyme or Parsley For garnish.

Instructions
 

  • Cook the pasta according to package instructions in a large pot of salted boiling water until al dente, about 8 to 10 minutes. Drain and set aside, reserving about a cup of pasta water.
  • While the pasta cooks, slice the onions thinly and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and stir to coat them in the oil.
  • Sprinkle the onions with salt and cook for about 10 minutes, stirring occasionally.
  • Reduce the heat to low and continue to cook the onions for an additional 20 to 30 minutes, stirring every 5 minutes until caramelized.
  • Add the minced garlic to the skillet and cook for another 1 to 2 minutes until fragrant.
  • Combine the cooked pasta with the caramelized onion mixture in the skillet. Toss well, adding reserved pasta water as needed.
  • Season with freshly cracked black pepper and adjust seasoning as needed.
  • Remove from heat and sprinkle grated Parmesan cheese over the pasta. Toss to combine.
  • Garnish with fresh herbs and serve warm.

Notes

For variations, consider adding cream for a richer sauce, seasonal vegetables, or different types of cheese.
