Instructions
Cook the pasta according to package instructions in a large pot of salted boiling water until al dente, about 8 to 10 minutes. Drain and set aside, reserving about a cup of pasta water.
While the pasta cooks, slice the onions thinly and set aside.
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and stir to coat them in the oil.
Sprinkle the onions with salt and cook for about 10 minutes, stirring occasionally.
Reduce the heat to low and continue to cook the onions for an additional 20 to 30 minutes, stirring every 5 minutes until caramelized.
Add the minced garlic to the skillet and cook for another 1 to 2 minutes until fragrant.
Combine the cooked pasta with the caramelized onion mixture in the skillet. Toss well, adding reserved pasta water as needed.
Season with freshly cracked black pepper and adjust seasoning as needed.
Remove from heat and sprinkle grated Parmesan cheese over the pasta. Toss to combine.
Garnish with fresh herbs and serve warm.

For variations, consider adding cream for a richer sauce, seasonal vegetables, or different types of cheese.
