Instructions
Preheat your oven to 375°F (190°C).
Prepare a baking dish by lightly greasing it with olive oil.
Make horizontal slits in each chicken breast, about 1 inch apart, without cutting all the way through.
Season both sides of the chicken breasts with salt and pepper.
Drizzle olive oil over the chicken breasts, ensuring it seeps into the slits.
Stuff the slits with alternating slices of mozzarella and halved cherry tomatoes.
Sprinkle chopped basil leaves over the stuffed chicken.
Place the stuffed chicken breasts in the prepared baking dish.
Drizzle additional olive oil on top and sprinkle with salt and pepper.
Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Let the chicken rest for about 5 minutes before drizzling with balsamic glaze and serving warm.
