  • 8 ounces Fresh Mozzarella Cheese Sliced into thin rounds.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Fresh Basil Leaves Roughly chopped.
  • 2 tablespoons Extra Virgin Olive Oil For drizzling over the chicken.
  • 1 teaspoon Salt For seasoning.
  • 1/2 teaspoon Freshly Ground Black Pepper To taste.
  • 2 tablespoons Balsamic Glaze For drizzling before serving.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Prepare a baking dish by lightly greasing it with olive oil.
  • Make horizontal slits in each chicken breast, about 1 inch apart, without cutting all the way through.
  • Season both sides of the chicken breasts with salt and pepper.
  • Drizzle olive oil over the chicken breasts, ensuring it seeps into the slits.
  • Stuff the slits with alternating slices of mozzarella and halved cherry tomatoes.
  • Sprinkle chopped basil leaves over the stuffed chicken.
  • Place the stuffed chicken breasts in the prepared baking dish.
  • Drizzle additional olive oil on top and sprinkle with salt and pepper.
  • Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Let the chicken rest for about 5 minutes before drizzling with balsamic glaze and serving warm.
