Instructions
1. Boil the eggs in a saucepan covered with cold water. Bring to a boil, then remove from heat and let sit for 12 minutes.
2. Prepare the shrimp by cooking in a skillet with olive oil and Cajun seasoning until pink and opaque. Cool and chop.
3. Transfer boiled eggs to an ice bath, cool, peel, and slice in half.
4. Remove yolks and mix with shrimp, mayonnaise, mustard, lemon juice, and remaining Cajun seasoning. Season with salt and pepper.
5. Fill egg whites with the yolk mixture using a piping bag or spoon.
6. Garnish with chives and optional Cajun seasoning. Serve chilled.
