  • 1 pound Chicken Breast Boneless, skinless, cut into bite-sized pieces.

Sauce

  • 1/2 cup Buffalo Sauce Your favorite brand or homemade.

Base

  • 1 cup Cottage Cheese Full-fat or low-fat.

Vegetables

  • 1/4 cup Green Onions Chopped, for garnish.
  • 1/2 cup Celery Diced, adds crunch.

Cheese

  • 1/2 cup Shredded Cheese Cheddar or mozzarella, for topping.

Seasoning

  • 1 tablespoon Olive Oil For sautéing the chicken.

Instructions
 

  • Prepare your ingredients by cutting the chicken breast into bite-sized pieces.
  • In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook for 5-7 minutes until golden brown and cooked through.
  • Lower the heat and pour in the buffalo sauce, stirring to coat the chicken. Let it simmer for about 2 minutes.
  • In a separate bowl, scoop out the cottage cheese and mix in the diced celery.
  • Assemble the bowl by placing the cottage cheese mixture at the bottom, followed by the buffalo chicken on top.
  • Finish with a sprinkle of green onions and shredded cheese. Serve warm.

Notes

For added crunch, serve with celery or carrot sticks on the side. Customize with your favorite toppings.
