Instructions
Prepare your ingredients by cutting the chicken breast into bite-sized pieces.
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook for 5-7 minutes until golden brown and cooked through.
Lower the heat and pour in the buffalo sauce, stirring to coat the chicken. Let it simmer for about 2 minutes.
In a separate bowl, scoop out the cottage cheese and mix in the diced celery.
Assemble the bowl by placing the cottage cheese mixture at the bottom, followed by the buffalo chicken on top.
Finish with a sprinkle of green onions and shredded cheese. Serve warm.
Notes
For added crunch, serve with celery or carrot sticks on the side. Customize with your favorite toppings.
