Instructions
 

  • 1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water before draining.
  • 2. In a skillet, melt the unsalted butter over medium heat until golden brown, about 5-7 minutes.
  • 3. Add the sliced onions to the skillet and reduce heat to low. Caramelize the onions for 20-25 minutes until deeply golden brown.
  • 4. Add minced garlic during the last 2 minutes of cooking the onions.
  • 5. Pour in the vegetable broth and add thyme. Simmer for 5 minutes.
  • 6. Toss the drained pasta with the onion mixture, adding reserved pasta water as needed for consistency.
  • 7. Season with salt and pepper to taste.
  • 8. Remove from heat and sprinkle with Parmesan cheese before serving.
  • 9. Serve immediately, garnished with additional thyme or cheese if desired.
