Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Reserve 1 cup of pasta water before draining.
2. In a skillet, melt the unsalted butter over medium heat until golden brown, about 5-7 minutes.
3. Add the sliced onions to the skillet and reduce heat to low. Caramelize the onions for 20-25 minutes until deeply golden brown.
4. Add minced garlic during the last 2 minutes of cooking the onions.
5. Pour in the vegetable broth and add thyme. Simmer for 5 minutes.
6. Toss the drained pasta with the onion mixture, adding reserved pasta water as needed for consistency.
7. Season with salt and pepper to taste.
8. Remove from heat and sprinkle with Parmesan cheese before serving.
9. Serve immediately, garnished with additional thyme or cheese if desired.
