Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Rinse the shrimp thoroughly under cold water and pat them dry with paper towels.
  • In a large mixing bowl, combine the shrimp, sliced peaches, minced garlic, olive oil, honey, salt, and pepper. Toss until well-coated.
  • Spread the mixture evenly on a baking sheet lined with parchment paper.
  • Sprinkle the red pepper flakes over the shrimp and peaches.
  • Roast in the preheated oven for 12-15 minutes until shrimp are pink and opaque, and peaches are slightly caramelized.
  • Remove from oven and let cool for a few minutes. Chop the fresh basil.
  • Transfer to a serving platter and sprinkle with chopped basil.
  • Serve immediately as a main course or part of a larger spread.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently to preserve texture.
