  • 4 fillets Salmon fillets Fresh, high-quality salmon fillets (about 4-6 ounces each).
  • 3 pieces Fresh peaches Ripe peaches, sliced.
  • 2 tablespoons Olive oil Extra virgin olive oil for coating.
  • 1 tablespoon Brown sugar For the glaze.
  • 2 cloves Garlic Minced garlic for flavor.
  • 2 tablespoons Soy sauce Low-sodium soy sauce recommended.
  • to taste Black pepper Freshly cracked black pepper.
  • 1 teaspoon Fresh thyme Chopped fresh thyme.
  • 1 tablespoon Lemon juice Freshly squeezed lemon juice.
  • to taste Salt Sea salt or kosher salt.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the olive oil, brown sugar, minced garlic, soy sauce, black pepper, chopped thyme, and lemon juice. Whisk until cohesive.
  • Place salmon fillets in a shallow dish and pour half of the marinade over them. Let marinate for 15-20 minutes.
  • Slice the peaches into wedges and arrange them on a baking sheet lined with parchment paper. Drizzle remaining marinade over peaches.
  • Place marinated salmon skin-side down on the same baking sheet with peaches.
  • Roast in the oven for 20-25 minutes until salmon is cooked through and flakes easily.
  • Remove from oven and let rest for a few minutes before serving.
  • Transfer salmon and peaches to a platter and serve warm.

For variations, try different fruits or herbs, and consider grilling instead of roasting.
