Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the olive oil, brown sugar, minced garlic, soy sauce, black pepper, chopped thyme, and lemon juice. Whisk until cohesive.
Place salmon fillets in a shallow dish and pour half of the marinade over them. Let marinate for 15-20 minutes.
Slice the peaches into wedges and arrange them on a baking sheet lined with parchment paper. Drizzle remaining marinade over peaches.
Place marinated salmon skin-side down on the same baking sheet with peaches.
Roast in the oven for 20-25 minutes until salmon is cooked through and flakes easily.
Remove from oven and let rest for a few minutes before serving.
Transfer salmon and peaches to a platter and serve warm.
