  • 8 ounces penne
  • 1 package Boursin Fine Herbs & Garlic cheese
  • 2 cups fresh baby spinach

  • First, bring a large pot of salted water to a boil. This will be used to cook the penne. Remember, the water should taste like the sea! It's crucial for flavoring the pasta as it cooks.
  • Once boiling, add the penne to the pot. Cook according to the package directions until it's al dente, usually about 10 to 12 minutes. The pasta should be firm to the bite, as it will continue to cook slightly after draining.
  • Important: Before you drain the pasta, reserve about a cup of the pasta water. This starchy water is key for creating the perfect sauce consistency later on.
  • Drain the penne but return it to the pot you just cooked it in. Make sure to take the pot off the burner to prevent overcooking.
  • Add the Boursin cheese to the hot pasta and sprinkle in a small splash of the reserved pasta water, about a few tablespoons. The heat of the pasta will help the cheese melt beautifully.
  • Using two spoons or a pasta fork, toss the pasta and cheese together. You want to mix it until the sauce reaches your desired consistency. If it feels too thick, gradually add more pasta water until it’s creamy and luscious.
  • Next, fold in the fresh spinach. Continue to toss the pasta until it’s evenly combined and the spinach starts to wilt slightly. This shouldn’t take more than a minute or so.
