Ingredients
  

  • 8 pieces egg roll wrappers
  • 8 slices deli corned beef, chopped
  • 8 slices Swiss cheese, cut into ½ inch rectangles
  • 1 cup sauerkraut, drained and squeezed
  • to taste Russian dressing for serving or use Thousand Island dressing

Instructions
 

  • Start by placing an egg roll wrapper on a flat surface, with a corner facing you.
  • Add one slice of chopped corned beef in the center of the wrapper, followed by a slice of Swiss cheese and two tablespoons of sauerkraut.
  • Dip your finger in a small bowl of water and run it around the edges of the wrapper to help seal it.
  • Fold the bottom corner of the wrapper over the filling, then start rolling it up tightly, tucking in the sides as you go.
  • Repeat this process with the remaining wrappers and filling until all are assembled.
  • Next, preheat your air fryer to 370°F (190°C) and spray the basket with cooking oil.
  • Carefully place the Reuben Egg Rolls in the air fryer basket in a single layer.
  • Air fry for about 10 minutes, flipping them halfway through until they are golden and crispy.
  • While they’re cooking, prepare to serve with Russian dressing on the side.
  • If you prefer frying, heat 2 inches of oil to 350°F (180°C) in a saucepan.
  • Deep fry the egg rolls until lightly browned and crispy for about 4 to 5 minutes.
  • Alternatively, you can bake them by preheating your oven to 350°F (180°C).
  • Line a baking sheet with parchment paper, place the egg rolls in a single layer, spray with cooking spray, and bake for 10 to 12 minutes.

Notes

  • Freezing: The best way to freeze egg rolls is to freeze them before they’re cooked. Create and make the entire egg roll, minus the cooking portion, and store them in a freezer-safe container or bag.
  • Thawing: When you’re ready to serve, just thaw them in the fridge and cook.
