Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine 1 ½ cups of all-purpose flour, ½ cup of granulated sugar, and a pinch of salt. Whisk until fully incorporated.
Add ½ cup of softened unsalted butter to the dry mixture. Blend until the mixture resembles coarse crumbs.
Press the mixture into the bottom of a greased 9x9 inch baking pan evenly.
Bake the crust for 20 minutes or until lightly golden.
In a large mixing bowl, whisk together 4 large eggs until well beaten. Gradually add in 1 cup of granulated sugar, whisking until combined.
Add ½ cup of fresh key lime juice and the zest from 2 limes to the egg mixture. Whisk until well combined.
Sprinkle ¼ cup of all-purpose flour into the mixture and gently fold it in.
Pour the filling over the pre-baked crust and spread it evenly.
Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly jiggly in the center.
Allow the pan to cool at room temperature for about an hour, then transfer to the refrigerator to chill for at least two hours.
Cut the bars into squares and dust with powdered sugar if desired. Serve chilled.
Notes
These bars can be customized with fresh fruit toppings or served with whipped cream for an indulgent touch.
