Instructions
Rinse the raspberries gently under cold water. If using frozen raspberries, add them directly to the pot.
In a medium-sized saucepan, combine the raspberries, sugar, lemon juice, and water. Stir gently to coat the raspberries.
Place the saucepan over medium heat and bring to a gentle simmer, allowing the raspberries to break down.
Reduce heat to low and cook for about 10 to 15 minutes, stirring occasionally until the mixture thickens.
Remove from heat, stir in vanilla extract, and adjust sweetness if needed. Allow to cool before transferring to a jar.
Let cool to room temperature, then refrigerate. Can be stored for up to one week.
