  • 2 pieces Potatoes peeled and sliced into 1/2 inch rounds

  • Start by preparing your ingredients. In a large pot, place the sliced potatoes and cover them with cold water. Add a generous pinch of salt. This will help season the potatoes while they cook. Bring the pot to a boil over medium-high heat. Keep an eye on it to prevent any overflow.
  • Once boiling, reduce the heat to medium and let the potatoes simmer gently. You want them to cook until they are tender but not falling apart, which takes about 10 to 12 minutes. Test their doneness with a fork; they should slide off easily. Once ready, drain the potatoes carefully and set them aside.
  • While the potatoes are cooking, it’s time to make the herb-infused butter. In a medium bowl, combine the room temperature butter, lemon juice, and parsley. Use a fork to blend it together until smooth. This mixture will add a vibrant flavor to our dish.
  • In a large skillet, heat a tablespoon of olive oil over medium heat. When the oil shimmers, add about two tablespoons of your prepared parsley butter mixture into the skillet. Allow it to melt and coat the bottom of the pan, filling the kitchen with its irresistible aroma!
