Instructions
Preheat your oven to 425°F (220°C).
Rinse the Brussels sprouts under cold water and pat dry.
Trim the ends and cut the Brussels sprouts in half.
In a large mixing bowl, combine Brussels sprouts with olive oil and toss to coat.
Add salt, pepper, garlic powder, and lemon zest. Toss again to distribute seasonings.
Prepare a baking sheet with parchment paper and spread the Brussels sprouts in a single layer.
Roast for 20-25 minutes, tossing halfway through for even cooking.
Remove from oven and sprinkle with Parmesan cheese if using.
Serve hot, optionally drizzled with more olive oil or lemon juice.
