Instructions
Preheat your oven to 375°F (190°C).
Peeled and slice sweet potatoes into thin rounds, about 1/8 inch thick.
In a medium saucepan, combine heavy cream, minced garlic, salt, pepper, and nutmeg. Heat until hot but not boiling.
Prepare a 9x13 inch baking dish by greasing it with butter or cooking spray.
Layer sweet potato slices in the baking dish, slightly overlapping each slice.
Pour a portion of the heated cream mixture over the sweet potatoes and sprinkle with cheese.
Repeat layering until all sweet potatoes are used, finishing with cream and cheese on top.
Cover the dish with aluminum foil and bake for 40 minutes.
Remove the foil and bake for an additional 20-25 minutes until the top is golden and bubbly.
Let the dish rest for 10 minutes before serving. Garnish with fresh herbs if desired.
