Instructions
Preheat your oven to 400°F (200°C).
Prepare the garlic by slicing off the top of a whole head, drizzling with olive oil, wrapping in foil, and roasting for 30-35 minutes until soft.
Wash, peel, and cut the potatoes into uniform chunks. Place in a large pot and cover with cold water, adding 1 teaspoon of salt.
Bring the pot to a boil over medium-high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
Remove the roasted garlic from the oven, let cool, then squeeze the cloves into a bowl to make a paste.
Drain the potatoes and return them to the pot to steam for a minute.
Add the roasted garlic paste, butter, and heavy cream to the potatoes and mash until smooth yet slightly chunky.
Season with additional salt and black pepper to taste, and fold in chives if desired.
Transfer to a serving bowl and optionally drizzle with olive oil or melted butter before serving.
Notes
Store leftovers in an airtight container for up to three days. Reheat gently with a splash of milk or cream.
