  • 4 large Flour Tortillas 10-12 inches in size for best results.
  • 1 pound Steak (Flank or Sirloin) Thinly sliced against the grain.
  • 2-3 tablespoons Chipotle Sauce Store-bought or homemade.
  • 2 cups Shredded Cheese (Monterey Jack or Cheddar) Fresh and of good quality.
  • 1 medium Onion Thinly sliced.
  • 1 medium Bell Pepper Sliced, any color.
  • 2 tablespoons Olive Oil For cooking steak and vegetables.
  • to taste Salt and Pepper For seasoning.

Instructions
 

  • Slice the flank steak or sirloin thinly against the grain and season with salt, pepper, and any additional spices.
  • Heat a skillet over medium-high heat, add 1 tablespoon of olive oil, and cook the seasoned steak for 4-5 minutes until browned. Remove and set aside.
  • In the same skillet, add another tablespoon of olive oil, then sauté the sliced onions and bell peppers for 5-7 minutes until soft and caramelized.
  • Heat another skillet over medium heat, place one tortilla in it, and sprinkle cheese over half of the tortilla.
  • Once the cheese melts, layer on the cooked steak, chipotle sauce, and more cheese. Fold the tortilla in half and press down gently.
  • Cook the quesadilla for 2-3 minutes on each side until golden brown and crispy. Repeat with remaining tortillas and fillings.
  • Let the quesadillas rest for a minute, then slice into wedges and serve with garnishes and dipping sauces.

Notes

Customize fillings to suit your taste. Consider adding fresh herbs or different proteins.
