Thinly sliced against the grain.

Chipotle Sauce

Instructions
Slice the flank steak or sirloin thinly against the grain and season with salt, pepper, and any additional spices.
Heat a skillet over medium-high heat, add 1 tablespoon of olive oil, and cook the seasoned steak for 4-5 minutes until browned. Remove and set aside.
In the same skillet, add another tablespoon of olive oil, then sauté the sliced onions and bell peppers for 5-7 minutes until soft and caramelized.
Heat another skillet over medium heat, place one tortilla in it, and sprinkle cheese over half of the tortilla.
Once the cheese melts, layer on the cooked steak, chipotle sauce, and more cheese. Fold the tortilla in half and press down gently.
Cook the quesadilla for 2-3 minutes on each side until golden brown and crispy. Repeat with remaining tortillas and fillings.
Let the quesadillas rest for a minute, then slice into wedges and serve with garnishes and dipping sauces.

Customize fillings to suit your taste. Consider adding fresh herbs or different proteins.
