Ingredients
  

Chicken Breasts

  • 4 pieces boneless, skinless chicken breasts Approximately 6 ounces each.

Marinade Ingredients

  • 0.5 cup Balsamic Vinegar High-quality balsamic vinegar.
  • 2 tablespoons Olive Oil Extra virgin olive oil.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Honey
  • 1 teaspoon Salt Kosher salt.
  • 0.5 teaspoon Pepper Freshly ground black pepper.

Caprese Salsa Ingredients

  • 8 ounces Fresh Mozzarella Diced.
  • 2 cups Cherry Tomatoes Halved.
  • 0.5 cup Fresh Basil Chopped.

Salsa Seasoning

  • Salt and Pepper Additional to taste.

Instructions
 

  • 1. Prepare the marinade by combining balsamic vinegar, olive oil, minced garlic, honey, salt, and pepper in a medium bowl. Whisk until well blended.
  • 2. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes.
  • 3. Prepare the caprese salsa by combining diced mozzarella, halved cherry tomatoes, and chopped basil in a mixing bowl. Toss gently and season with salt and pepper.
  • 4. Preheat grill or skillet over medium-high heat. Cook chicken for 5-7 minutes on one side, then flip and cook for another 5-7 minutes until cooked through.
  • 5. Remove chicken from heat and let it rest for 5 minutes before slicing.
  • 6. Serve sliced chicken topped with caprese salsa.

Notes

For variations, consider adding jalapeños for heat, using different cheeses, or marinating overnight for deeper flavor.
