Equipment

  • Wooden Spoon
  • Chef's Knife
  • Mixing Bowl
  • Frying Pan

Ingredients

  • 225 g Peanut Butter
  • 120 ml Milk
  • 50 g Butter
  • 170 g Honey
  • 250 g Rolled Oats
  • optional ¼ cup Chocolate Chips

Instructions

  • Line a loaf tin with baking paper. This will ensure that the bars can be removed easily once they’re set.
  • In a medium saucepan, place the peanut butter, milk, butter, and honey. Heat over medium heat, stirring constantly until the mixture becomes smooth and starts to bubble.
  • Continue stirring until a caramel-like consistency forms. Watch closely as the mixture thickens and darkens; it should be glossy and able to create a channel when you run a spoon through it.
  • Remove the saucepan from the heat. Stir in the rolled oats until they are fully coated in the caramel mixture. This should create a thick, sticky mix.
  • Transfer the mixture to the lined loaf tin, pressing it down firmly to ensure that it holds its shape. You want it to be compact to form solid bars.
  • Refrigerate the tin for about 4 hours, allowing the bars to set properly. This step is crucial for achieving the right texture!
  • If you want, melt some chocolate chips and drizzle them over the top to create a decorative pattern. This adds a nice touch and extra sweetness.
  • Once set, remove the bars from the tin and slice them into squares or rectangles, depending on your preference.
  • Enjoy your delicious Peanut Butter Oatmeal Bars as a snack or breakfast option. They’re perfect on their own or paired with a glass of milk!

Notes

  • Peanut butter: This recipe will work with any nut butter.
  • Rolled oats: I haven't tested this recipe with substitutes for rolled oats, but both traditional rolled oats and quick cook oats work fine.
  • Honey: Maple syrup will work as a substitute for honey.
  • Milk: Coconut milk works as an alternative; I have not tested other plant-based milk.
  • Butter: Coconut oil works as an alternative.
  • Storage: Store your peanut butter bars in an airtight container in the fridge for up to 7 days.
