Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch square baking dish with parchment paper.
  • Mash the ripe bananas in a large mixing bowl until smooth.
  • Add the peanut butter, honey or maple syrup, eggs, and vanilla extract to the mashed bananas and mix well.
  • In a separate bowl, mix the rolled oats, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
  • Allow to cool for 10 minutes, then lift out and cool completely before cutting into squares.
