Ingredients
  

  • 4 cups rolled oats
  • 1 cup roasted peanuts
  • 2 tablespoons ground flaxseed
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup drippy peanut butter
  • ¼ cup honey
  • ¾ cup strawberry jam or jelly

Instructions
 

  • Preheat your oven to 350 °F (175 °C). This ensures that your granola will bake evenly, achieving that perfect golden brown color.
  • Line a baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze.
  • In a large bowl, combine the rolled oats, roasted peanuts, ground flaxseed, cinnamon, and salt. Stir them together until they're evenly mixed.
  • Add in the drippy peanut butter, honey, and strawberry jam. Mix it well until all the dry ingredients are coated.
  • Transfer the oat mixture onto the prepared baking sheet. Spread it out evenly, making sure it’s not too thick, so it can bake properly.
  • Place it in the preheated oven and bake for about 15 minutes. Make sure to stir halfway through to promote even browning.
  • Keep an eye on it to avoid burning. You want it to be a beautiful golden brown.
  • Once done, let it cool completely on the baking sheet. This will help it to crisp up nicely.
  • Store your granola in an airtight container. It’s best kept in the refrigerator for up to three weeks.
  • Enjoy it as a topping on yogurt, as a snack by itself, or even with milk!

Tip 1: Make sure to look for gluten-free oats if you need to be gluten-free.
Tip 2: For this recipe, it’s best to use natural peanut butter (or almond butter) which tend to be thinner and more drippy. Typically, you’ll need to stir it together before you use it.
Tip 3: If you only have creamy peanut butter, I recommend gently heating up the honey and the peanut butter together first before you add it to the bowl to mix together.
