  • 2 tablespoons Olive Oil

Instructions
 

  • Preheat your oven to 425℉ (215℃). This temperature is perfect for roasting and will help achieve a nice crisp on the broccoli.
  • Next, wash and dry your broccoli. It’s important to remove any moisture so that it roasts rather than steams. Trim the broccoli into 1 to 2-inch florets, making sure to remove most of the stalk as it can be tough.
  • Arrange the florets on a rimmed baking sheet. Make sure to spread them out evenly; overcrowding will lead to steaming instead of roasting. Drizzle with olive oil, kosher salt, and freshly cracked black pepper. Toss everything together until each floret is well coated.
  • Spread the broccoli out in a single layer. This step is crucial for achieving that beautiful roasted texture. You want to leave room around each floret!
  • Place the baking sheet in the preheated oven and roast for 20 minutes. Keep an eye on it; you want the tips to turn golden brown.
  • After 20 minutes, take the sheet out and flip the broccoli using tongs or a spatula. This helps in even cooking.
  • Return the baking sheet to the oven and continue to bake for another 10 to 15 minutes. Look for the broccoli to be tender and browned. The edges should have a nice crisp to them.
  • Once done, remove from the oven and toss the roasted broccoli with parmesan cheese and a drizzle of lemon juice if desired. The cheese will melt slightly, creating an irresistible coating.
