Preheat your oven to 350 degrees.
Rinse the chicken in cool water and pat dry with a paper towel.
In a small bowl, combine the panko breadcrumbs, smoked paprika, kosher salt, and ground black pepper.
Dip each piece of chicken into the egg mix, then into the panko mixture.
Once coated, place each chicken piece on a cookie sheet lightly sprayed with nonstick spray.
Repeat the breading process with the remaining chicken breasts.
In a separate bowl, combine olive oil and garlic.
Bake the chicken for about 15 to 20 minutes, or until the internal temperature reaches 165 degrees.
While the chicken bakes, prepare the sweet potatoes.
Spread the coated sweet potatoes onto another cookie sheet in an even layer.
Continue to bake the sweet potatoes for an additional 10 to 15 minutes.
Once both the chicken and sweet potatoes are done, serve them together hot.
