Ingredients
  

  • 4 boneless and skinless chicken breasts
  • 1 cup whole-wheat panko breadcrumbs
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 egg
  • 1 tablespoon extra virgin olive oil
  • 1 garlic clove minced
  • 2 large sweet potatoes
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper to taste
  • 1 teaspoon lime juice

Instructions
 

  • Preheat your oven to 350 degrees.
  • Rinse the chicken in cool water and pat dry with a paper towel.
  • In a small bowl, combine the panko breadcrumbs, smoked paprika, kosher salt, and ground black pepper.
  • Dip each piece of chicken into the egg mix, then into the panko mixture.
  • Once coated, place each chicken piece on a cookie sheet lightly sprayed with nonstick spray.
  • Repeat the breading process with the remaining chicken breasts.
  • In a separate bowl, combine olive oil and garlic.
  • Bake the chicken for about 15 to 20 minutes, or until the internal temperature reaches 165 degrees.
  • While the chicken bakes, prepare the sweet potatoes.
  • Spread the coated sweet potatoes onto another cookie sheet in an even layer.
  • Continue to bake the sweet potatoes for an additional 10 to 15 minutes.
  • Once both the chicken and sweet potatoes are done, serve them together hot.
