Instructions
Preheat your oven to 180°C (350°F).
Grease a rectangular baking tray (approximately 20x30cm) with butter or line it with parchment paper.
In a large mixing bowl, beat the softened butter and caster sugar together until light and fluffy.
Crack the eggs into the bowl one at a time, mixing well after each addition.
In a separate bowl, whisk together the self-raising flour and baking powder.
Gradually add the flour mixture to the wet ingredients, mixing gently until just combined.
Fold in the grated orange zest and freshly squeezed orange juice until evenly distributed.
Transfer the batter into the prepared baking tray and smooth the top with a spatula.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the drizzle by mixing the icing sugar with a few tablespoons of orange juice.
Once baked, allow the cake to cool in the tray for about 10 minutes, then transfer to a wire rack to cool completely.
Once cool, pour the orange drizzle over the top, allowing it to drip down the sides.
Slice the cake into squares or rectangles and serve.
