Instructions
 

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and spray it with nonstick cooking spray. This ensures that your cake won’t stick and comes out easily.
  • In a large mixing bowl, combine the yellow cake mix, melted unsalted butter, and one egg. Use an electric mixer on medium speed until the mixture is smooth and crumbly. It should resemble a thick dough. Press this mixture firmly into the bottom of your prepared pan. This will serve as the cake layer.
  • Wipe out the mixing bowl to avoid mixing flavors. Add the cream cheese, remaining melted butter, two eggs, and vanilla to the bowl. Mix on medium speed until the cream cheese is well blended and the mixture is smooth. You want no lumps left in this filling.
  • Gradually add powdered sugar to the cream cheese mixture, mixing on low speed. This will help prevent the sugar from flying everywhere. Once incorporated, switch to medium speed until well combined.
  • Spread the cream cheese mixture evenly over the cake layer in the pan. Make sure to cover it completely for an even bake.
  • Place the pan in the preheated oven and bake for 40 to 50 minutes. The top should turn light golden and no longer appear glossy. You can test it by inserting a toothpick in the center; it should come out clean.
  • Once baked, remove the cake from the oven and let it cool completely in the pan. This cooling time allows the filling to set properly.
  • After cooling, sprinkle a light dusting of powdered sugar over the top for a beautiful presentation. Slice into bars for serving.
  • Store any leftovers in an airtight container at room temperature for up to 4 days. If you want to save some for later, freeze in a single layer for up to 3 months. Just remember to thaw before serving!
