  • 1 sheet Puff Pastry Thawed if frozen.
  • 2 large Onions Preferably yellow or sweet, sliced thinly.
  • 2 tablespoons Olive Oil For sautéing the onions.
  • 1 teaspoon Fresh Thyme Leaves Or 1/2 teaspoon dried thyme.
  • to taste Salt For enhancing flavors.
  • to taste Freshly Ground Black Pepper For added warmth and depth.
  • 1 cup Grated Gruyere Cheese For topping the tarts.
  • 1 large Egg For egg wash.
  • optional Balsamic Vinegar or White Wine For added depth while caramelizing onions.

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Roll out the thawed puff pastry sheet on a lightly floured surface to about 1/8 inch thick. Cut into squares or circles.
  • Chill the cut pastry shapes on a baking sheet lined with parchment paper for about 15 minutes.
  • Heat olive oil in a large skillet over medium heat. Add sliced onions and a pinch of salt. Cook until soft and golden brown, about 15-20 minutes.
  • Stir in thyme leaves and season with salt and pepper. Remove from heat and let cool slightly.
  • Score a smaller rectangle or circle inside each pastry piece, about 1/2 inch from the edge. Spoon the onion mixture into the center.
  • Sprinkle grated Gruyere cheese over the onion filling.
  • Beat the egg and brush it over the edges of the pastry.
  • Bake for about 20-25 minutes until the pastry is puffed and golden brown, and the cheese is melted.
  • Let cool for a few minutes before serving warm or at room temperature.

Notes

These tarts can be prepared in advance and baked just before serving for the best texture.
