Instructions
Preheat the oven to 400°F (200°C).
Roll out the thawed puff pastry sheet on a lightly floured surface to about 1/8 inch thick. Cut into squares or circles.
Chill the cut pastry shapes on a baking sheet lined with parchment paper for about 15 minutes.
Heat olive oil in a large skillet over medium heat. Add sliced onions and a pinch of salt. Cook until soft and golden brown, about 15-20 minutes.
Stir in thyme leaves and season with salt and pepper. Remove from heat and let cool slightly.
Score a smaller rectangle or circle inside each pastry piece, about 1/2 inch from the edge. Spoon the onion mixture into the center.
Sprinkle grated Gruyere cheese over the onion filling.
Beat the egg and brush it over the edges of the pastry.
Bake for about 20-25 minutes until the pastry is puffed and golden brown, and the cheese is melted.
Let cool for a few minutes before serving warm or at room temperature.
Notes
These tarts can be prepared in advance and baked just before serving for the best texture.
