  • 1 pound Italian sausage Remove casing for crumbling or leave intact for slices.
  • 9 ounces Tortellini Fresh or frozen cheese tortellini.
  • 4 cups Low-sodium chicken broth Creates a flavorful base.
  • 2 medium Carrots Diced.
  • 1 stalk Celery Chopped.
  • 3 cloves Garlic Minced.
  • 2 cups Fresh spinach Adds nutrition and color.
  • 1 teaspoon Italian seasoning Blends herbs for flavor.
  • to taste Salt Adjust to taste.
  • to taste Pepper Adjust to taste.
  • 1 tablespoon Olive oil For sautéing.

Instructions
 

  • Heat a large pot over medium heat. Add olive oil and warm it up.
  • Add the Italian sausage and break it apart with a wooden spoon. Sauté until browned, about 5 to 7 minutes.
  • Add minced garlic and sauté for an additional minute until fragrant.
  • Incorporate diced carrots and chopped celery. Cook for another 3 to 4 minutes.
  • Pour in chicken broth and scrape the bottom of the pot to release browned bits.
  • Add tortellini, bring to a boil, then reduce to a simmer. Cook for 5 to 7 minutes.
  • Add Italian seasoning, salt, and pepper. Adjust seasonings to taste.
  • Fold in fresh spinach and stir until wilted, about 1 to 2 minutes.
  • Remove from heat and let sit for a few minutes before serving.
  • Serve hot, garnished with freshly grated Parmesan cheese if desired.

Notes

For a creamier texture, add a splash of heavy cream. You can also customize with different vegetables or spices.
