Instructions
Heat a large pot over medium heat. Add olive oil and warm it up.
Add the Italian sausage and break it apart with a wooden spoon. Sauté until browned, about 5 to 7 minutes.
Add minced garlic and sauté for an additional minute until fragrant.
Incorporate diced carrots and chopped celery. Cook for another 3 to 4 minutes.
Pour in chicken broth and scrape the bottom of the pot to release browned bits.
Add tortellini, bring to a boil, then reduce to a simmer. Cook for 5 to 7 minutes.
Add Italian seasoning, salt, and pepper. Adjust seasonings to taste.
Fold in fresh spinach and stir until wilted, about 1 to 2 minutes.
Remove from heat and let sit for a few minutes before serving.
Serve hot, garnished with freshly grated Parmesan cheese if desired.
Notes
For a creamier texture, add a splash of heavy cream. You can also customize with different vegetables or spices.
