Gather all your ingredients and ensure everything is prepped. Dice the chicken, chop the onions and bell peppers, and mince the garlic.
In a large pot, heat olive oil over medium-high heat. Add the diced chicken and sauté until golden brown, about 5-7 minutes.
Add the chopped onions and bell peppers. Cook for another 3-4 minutes until softened.
Incorporate minced garlic and Cajun seasoning. Stir well for about 1 minute until fragrant.
Pour in chicken broth and bring to a gentle boil. Scrape the bottom of the pot to release browned bits.
Add the pasta, stir to submerge, reduce heat to medium-low, cover, and simmer for 10-12 minutes.
Check pasta for doneness. If needed, simmer for a couple more minutes. Remove from heat.
Stir in heavy cream until evenly distributed.
Season with salt and pepper to taste. Garnish with parsley or green onions if desired.
