Instructions
Gather all ingredients: chop onion and garlic, and measure beef broth and cream.
In a large pot over medium heat, add oil and chopped onion. Sauté for 3-4 minutes until translucent.
Add minced garlic and cook for an additional minute until aromatic.
Increase heat to medium-high, add ground beef, and cook until browned.
Season with salt, pepper, and Italian seasoning, mixing well.
Pour in beef broth, scraping the bottom of the pot to deglaze. Bring to a gentle boil.
Add tortellini, stirring gently to submerge in broth.
Reduce heat to medium-low, cover, and simmer for 5-7 minutes until tortellini are tender.
Slowly pour in heavy cream, stirring continuously to create a creamy sauce.
Add shredded cheddar cheese gradually, stirring until melted and combined.
Taste and adjust seasoning if needed. Add more cheese for a cheesier flavor.
Remove from heat and garnish with chopped parsley before serving.
Notes
Store leftovers in an airtight container for up to three days. Can be frozen for longer storage.
