Instructions
In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey, dried oregano, dried thyme, salt, and pepper to prepare the marinade.
Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.
Preheat your oven to 400°F (200°C).
Heat a large oven-safe skillet over medium heat and add a drizzle of olive oil. Place the marinated chicken breasts in the skillet.
Sear the chicken for about 4 to 5 minutes on each side until golden brown.
Add the chopped vegetables around the chicken in the skillet and pour the reserved marinade over everything.
Transfer the skillet to the oven and bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven, let rest for a few minutes, and garnish with fresh basil before serving.
