Vegetables

Instructions
 

  • In a large bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey, dried oregano, dried thyme, salt, and pepper to prepare the marinade.
  • Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  • Preheat your oven to 400°F (200°C).
  • Heat a large oven-safe skillet over medium heat and add a drizzle of olive oil. Place the marinated chicken breasts in the skillet.
  • Sear the chicken for about 4 to 5 minutes on each side until golden brown.
  • Add the chopped vegetables around the chicken in the skillet and pour the reserved marinade over everything.
  • Transfer the skillet to the oven and bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven, let rest for a few minutes, and garnish with fresh basil before serving.

Notes

This dish can be served on its own or with rice, quinoa, or a fresh salad for a complete meal.
