Equipment

  • Large Pot
  • Frying Pan

Ingredients

  • 3 cups water
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups quick cooking oats I used Bob’s Red Mill – Gluten Free
  • 1 vanilla bean pod
  • 4 tablespoons brown sugar
  • 1 pint fresh raspberries

Instructions

  • In a small saucepan bring water and kosher salt to a boil. Spit vanilla bean and scrape the seeds into the water with the oats. Add the whole pod for more flavor (optional). Add the oats, reduce heat, and cook for 3-5 minutes. Cover and and remove from heat and let sit until it reaches the consistency you prefer. Remove vanilla pod. Divide the oatmeal among four broiler-proof bowls. Top with 3-4 raspberries, sprinkle 1 tablespoon of brown sugar over each, and place under broiler. Broil until sugar caramelizes and forms a crust, about 3 to 4 minutes. Watch carefully so sugar doesn’t burn. Serve immediately with cream and additional fruit or topping of your choice if desired.

Notes

  • Storage: Leftover Oatmeal Brulee can be stored in an airtight container in the fridge for up to three days. However, the brulee topping may lose some of its crunch.
  • Reheating: To reheat, simply warm the oatmeal in the microwave and then re-brulee the sugar topping under the broiler for a few minutes to regain that crunchy texture.
  • Ingredient Quality: Using quality ingredients, especially with the oats and fresh fruit, can significantly enhance the flavor of your dish.
  • Vanilla Substitutes: If you don’t have a vanilla bean pod, you can use vanilla powder or an alternative flavoring to infuse the oats, though the fresh pod gives the best results.
