  • 1/2 cup Peanut Butter
  • 1/4 cup Maple Syrup

  • In a large mixing bowl, add your oat flour and set it aside. This forms the base of your cookie dough.
  • In a microwave-safe bowl, combine your peanut butter and maple syrup. Microwave the mixture until the peanut butter has melted, about 30 seconds. Stir well to combine.
  • Pour the melted peanut butter and maple syrup mixture into the bowl with the oat flour. Mix until a thick dough begins to form. If the dough is too thick, gradually add a tablespoon or two of water to loosen it up.
  • If the dough is too thin, simply sprinkle in a bit more oat flour until you reach your desired consistency. It should be firm but moldable.
  • Once you’ve reached the right texture, gently fold in the chocolate chips until they are evenly distributed throughout the dough.
  • Using your hands, form 12 equally sized balls of dough. Place them onto a plate lined with parchment paper.
  • Press down on each ball to flatten them slightly into cookie shapes. This will help them hold their form while chilling.
  • Place the plate in the refrigerator for at least 30 minutes. This allows the cookies to firm up and makes them easier to enjoy.
