  • 8 ounces Mushrooms Fresh button or cremini mushrooms, cleaned and sliced.
  • 8 ounces Cheese Mix of sharp cheddar and creamy mozzarella or fontina.
  • 4 tablespoons Butter Unsalted butter for spreading on the bread.

  • Salt To taste.
  • Pepper To taste.
  • Fresh herbs Optional, such as thyme or parsley.

Instructions

  • 1. Clean the mushrooms with a damp cloth and slice them evenly. Set aside.
  • 2. In a skillet, melt 1 tablespoon of butter over medium heat. Add minced garlic and sauté for 30 seconds. Add sliced mushrooms, season with salt and pepper, and sauté for 5-7 minutes until golden brown. Remove from heat.
  • 3. Spread butter on one side of each slice of bread.
  • 4. On the unbuttered side of two slices, layer half of the cheese, sautéed mushrooms, and remaining cheese. Top with the other slices, buttered side facing out.
  • 5. In the same skillet, grill the sandwich over medium heat for 3-4 minutes until golden brown. Flip carefully.
  • 6. Grill the other side for another 3-4 minutes, pressing down gently until both sides are golden and cheese is melted.
  • 7. Remove from skillet, let rest for a minute, slice in half, and serve warm.

Notes
