Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion sliced thin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/4 teaspoon ground ginger
  • 1 teaspoon kosher salt
  • 15 ounce chopped tomatoes
  • 1 can garbanzo beans drained and rinsed
  • 1 pound chicken thighs skinless

Instructions
 

  • In a large sauté pan, heat the olive oil over medium heat. You want it to shimmer but not smoke. This means it’s just right for sautéing.
  • Add the onion slices to the pan. Sauté for around five minutes, stirring occasionally, until the onions are translucent and fragrant. This will lay the foundation for your flavor.
  • Next, sprinkle in the paprika, cinnamon, cumin, and ground ginger. Stir well to coat the onions with the spices. You should start to notice the beautiful aroma filling your kitchen.
  • Now, add the can of chopped tomatoes to the pan. Bring the mixture to a gentle boil, stirring everything together. You want the flavors to meld and create a rich sauce.
  • Once boiling, add the drained garbanzo beans and the chicken thighs into the sauce mixture. Stir to coat the chicken completely with the lovely sauce.
  • Reduce the heat to low, cover the pan, and let it simmer for about 20 minutes. You can stir halfway through to ensure even cooking. The chicken should be cooked through and tender.
  • After 20 minutes, check the chicken for doneness. It should be juicy and easily pull apart with a fork. If it’s not quite there, cover and cook for an additional five minutes.
  • Once cooked, remove the pan from heat. Let it sit for a couple of minutes to cool slightly. This sets the flavors perfectly.
  • Finally, serve your Moroccan Chicken hot, garnished with fresh herbs if desired. Enjoy the burst of flavors!

Notes

When stored properly, leftovers can last up to three days in the refrigerator. For longer storage, freeze the cooked Moroccan Chicken in a freezer-safe container for up to three months.
