- 2 cups old-fashioned whole rolled oats
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 2 large eggs
- 1 cup unsweetened applesauce
- ⅔ cup light brown sugar
- 3 tablespoons canola or vegetable oil
- 2 teaspoons vanilla extract
- 1 ½ cups shredded carrots
- ¾ cup raisins
Preheat your oven to 350°F and spray the mini muffin pans with floured cooking spray; set aside.
In your high-speed blender, add the oats and grind into a fine powder, about 30 seconds.
Add the cinnamon, baking powder, salt, and baking soda. Blend for a few seconds to mix.
Add the eggs, applesauce, brown sugar, oil, and vanilla extract. Blend briefly to combine.
Add the carrots and raisins, and stir in by hand. Don’t overmix!
Fill the prepared muffin tins to just under three-quarters full.
Bake for about 17 minutes or until a toothpick comes out mostly clean.
Allow the muffins to cool in the pan for about 10 minutes before removing.
