Preheat your oven to 350 degrees F.
Line an 8-inch square baking pan with parchment paper, greasing it lightly.
Place the Oreos in a food processor and blend until fine crumbs.
Add the melted butter to the Oreo crumbs and blend until combined.
Press the Oreo crust mixture into the bottom of the prepared pan.
Bake the crust for 10 minutes.
In a large mixing bowl, beat the cream cheese with an electric mixer for 30 seconds.
Add the granulated sugar and mix well.
Add the sour cream, flour, and both extracts. Mix until combined.
Add the eggs one at a time, mixing well after each.
Add a few drops of green food coloring if desired.
Pour the filling over the baked crust and tap the pan to release air bubbles.
Bake for 33 to 35 minutes.
Remove from the oven and cool completely in the pan.
Chill in the refrigerator for at least 2 hours.
Slice and serve the Mint Cheesecake Bars.
