Instructions
 

  • Heat the vegetable oil in a large skillet over medium heat. Add the chopped onions and sauté for about 2-3 minutes until translucent.
  • Add the minced garlic and cook for an additional minute, stirring frequently.
  • Incorporate the diced bell pepper and carrots, sauté for about 5 minutes until softened.
  • Add the ground beef, break it up, and cook until browned, about 6-8 minutes.
  • Drain excess fat if necessary. Stir in diced tomatoes, potatoes, green olives, and raisins.
  • Season with cumin, cinnamon, salt, and pepper. Stir to combine.
  • If using, pour in beef broth and stir.
  • Cover and reduce heat to low. Simmer for about 20-25 minutes until potatoes are tender.
  • Taste and adjust seasoning if necessary. Let rest before serving.

Notes

Mexican Picadillo can be made in advance and stored in the refrigerator for up to three days. It also freezes well.
